This Thai Citrus Chicken Salad is so light and refreshing but packs a serious protein punch! Anytime I have leftover shredded chicken, this is my go to!
For the salad:
1 chicken breast, about 7 to 8 ounces, shredded & flavored with garlic and fresh lime juice
1 1/2 cup Napa cabbage, shredded
1 cup red cabbage, shredded
1 cup mango,cut into matchsticks
1 cup carrots, shredded
1/4 cup green onion, minced
1/4 cup cilantro, chopped
1 tablespoon olive oil
1/2 lime, cut into wedges
For the dressing:
1 tablespoon fresh lime juice
1 tablespoon soy sauce
1 tablespoon fish sauce
1 teaspoon rice vinegar
1 teaspoon sugar
1/2 teaspoon olive oil
2 cloves garlic, minced
1/2 to 1 jalapeno, or to taste
1. In a large bowl, combine all salad ingredients
2. In a separate bowl, combine all dressing ingredients
3. Pour dressing over salad, toss, and enjoy!
Tip: For those busy nights, a rotisserie chicken works well and you can buy the cabbage and carrots already shredded!
