Protein Power Bowl

Chicken is a staple in our household.  I like to keep plain shredded chicken on hand for those quick meals!  I just so happened to have everything in the fridge and pantry ready to go for this easy and healthy lunch.  You can also change it up to whatever ingredients you have on hand!

Ingredients:

1/2 cup shredded chicken
1 cup green leaf lettuce
1/4 cup corn
1/4 cup rinsed and drained black beans
1/4 cup tomatoes
1 tbsp purple onion
1 tbsp salsa
salt and pepper to taste

Preparation:

1. Combine all ingredients into bowl.
2. Top with your favorite salsa or avocado ranch dressing!
