There was a slight winter chill in the air this week. Which calls for a healthy and hearty feel good soup! This healthy Chicken Noodle Soup recipe is so filling and will warm your belly right up! I also snuck in some cabbage for some added greens and fiber.
2 cups carrots
half a head of cabbage
1 cup onion
2 tbsp butter
10 cups low sodium chicken broth
4 shredded chicken breasts
3-4 cups bowtie pasta
2 tsp basil
2 tsp oregano
1 tsp onion powder
1 tsp salt
1 tsp garlic powder
pepper to taste
1. Add butter, carrots, and sliced onion into large pot. Cook until tender.
2. Add remaining ingredients EXCEPT cabbage.
3. Bring to a boil and reduce heat to simmer for 15 minutes to let all the flavors marinate.
4. Add cabbage and simmer for 10 more minutes. Taste broth and add additional seasonings for stronger flavor!
Pair with crackers, grab a warm blanket, and turn on your favorite movie! Soup Heaven.
